2 pounds of ground beef
- 1 pound of pork sausage
- 18 saltine crackers that have been crushed
- 1/2 diced green pepper
- 1/2 onion chopped into small pieces
- 2 larges eggs lightly beaten
- 1 tablespoon of Worcestershire sauce
- 1 teaspoon of yellow mustard
- 1/2 cup of well packed brown sugar divided in half
- 1/2 cup of ketchup

Preheat your oven to 350 degrees Fahrenheit. In a medium sized bowl, mix together the first 8 ingredients along with 1/4 cup of brown sugar. Do not over mix the ingredients- just mix them until they are blended together. Grease an 11X7″ baking dish and shape the mixture into a loaf (approximately 10X5″). Bake the loaf at 350 degrees for an hour. After an hour, remove the loaf from the oven and drain the excess liquid. Then, mix the ketchup and leftover brown sugar together. Pour this mixture over the loaf and spread it out. Put the meatloaf back in the oven for approximately 15 minutes. Check the loaf with a meat thermometer. When it is fully cooked, it should register 160 degrees in the thickest part of the loaf. After it is fully cooked, remove it from the oven and allow it to sit for 20 minutes. When you are ready to slice it, remove it from the pan. Then, you are ready to dig in and enjoy your delicious (and FRUGAL) holiday meatloaf!
