The 8 day Passover festival is celebrated in the early spring. It recognizes the emancipation of the Israelites from slavery in ancient Egypt. The Passover holiday commences on the 15th of the Hebrew month of Nisan and is one of the most sacred of Jewish Holidays.
In the Narrative Exodus, it tells of 10 plagues that afflicted the Egyptians until the release of their Israelite slaves. One plague was the death of the first born child. The Israelites marked the doorposts of their homes with the blood of slaughtered lambs so that the Lord would “pass over” and spare their first borns, hence the name of the holiday.
Once freed, the Israelites left so fast that they could not wait for their bread to rise. Due to this hasty exit, Matzo (flat unleavened bread) is now eaten during Passover. On the first night of Passover Jewish families gather for a special dinner called Seder. During this dinner the story of the Exodus is retold and wine and bread are consumed. Traditional foods during the week of Passover include lamb, chicken, Matzo, nut and honey mixtures, fish, and spring vegetables such as artichokes, fava beans, and peas.
