Breakfast time in my house is pretty crazy. Trying to get everyone out of the house to work or to school can be a real headache. I really wanted to make the whole breakfast process easier. I found this great recipe: COOKING ON A BUDGET FREEZER BREAKFAST BURRITOS. It’s from a great blog called The Help Mates. I really wanted to share the recipe with you all of you to help you with your breakfast process.
The Freezer Breakfast Burritos can be made in one large batch. This recipe yields about 20 burritos. The ingredients only cost around $9, which costs about 45 cents a burrito! Now, that’s a great deal for a family of four. Those burritos could feed your family for an entire week. Add a banana or any fruit and you have a great, healthy and frugal breakfast on the go!
The blog says that to make all 20 burritos it takes about 45 minutes. The recipe is pretty straight forward, as well. I listed ingredients and instructions below.
Freezer Breakfast Burritos
1 dozen eggs
1 medium onion, chopped
20 medium flour tortillas
6 red potatoes, chopped
1 lb. sausage (I use the roll/tube)
16 oz. shredded cheddar cheese
1 8 oz. block of cream cheese
Salt, Pepper, and a little oil (for cooking the potatoes)
Directions
First, shred the cheese, chop the potatoes/onions together, crack the eggs open and whisk in a separate bowl (to save time).
Cook the potatoes/onions mix in oil. Season the mix to taste. Cook about 5 to 10 minutes.
Cook and brown the sausage completely. Then, drain all the grease and reduce heat to low. Mix in your cream cheese. You can omit the cream cheese if that doesn’t sound appealing to you. Scramble the eggs in a little butter and season with salt and pepper.
Once you have all the ingredients fully cooked you will want to head to a work space where you have plenty of room to assemble your burritos. Make sure you fold in all ingredients and use the edge of the tortilla to package all the ingredients, so nothing falls out.
One blogger notes that you should label each burrito individually if you plan to use any other meats besides sausage. Once you are done with assembly, place the burritos in the freezer in gallon size bags.
To reheat the burritos, defrost the burritos in the refrigerator and reheat in the microwave for 3 to 4 minutes and enjoy!
