Cooking on a Budget Italian Mac and Cheese

Need a quick and cheap dinner idea for the weekend? Why not try this recipe I saw on Pop Sugar for Italian Mac and Cheese. The Italian Mac and Cheese recipe is simple, yummy, serves four and costs less than $5 to make, according to the website. This recipe is a twist on pasta carbonara and mac and cheese and is made with just a few ingredients. Italian Mac and CheeseThis is a great mac and cheese recipe base if you want to add any other ingredients like bacon, mushrooms, broccoli, ham or even lobster. Mac and cheese is so versatile you can really make this dish your very own specialty with all the extras the your family loves. And it only takes about 20 minutes to make this recipe! You can beat a quick and cheap dinner idea that is so versatile!

Ingredients

1 pound dry elbow macaroni noodles
2 eggs
1 cup parmigiano-reggiano, grated, plus more for serving
2 tablespoons extra-virgin olive oil, plus more for drizzling
4 garlic cloves, finely chopped
Black pepper, freshly ground
1/2 bunch flat-leaf parsley, leaves only, chopped

Directions

Fill a large pot with water. Bring the water to a boil, then liberally salt it until it tastes like salt water. Add pasta and cook according to package instructions, or until al dente. Drain pasta, reserving 1/2 cup of cooking water. Transfer pasta to a large bowl. To drained pasta, toss in garlic/oil mixture, then pour in egg/cheese mixture, stirring quickly until the eggs thicken and turn opaque. Thin out the sauce with reserved pasta water, 1 tablespoon at a time, if necessary. Season with ground black pepper and salt. Garnish with parsley and more Parmesan. Meanwhile, beat the eggs and Parmesan together in a small bowl and set aside. In a sauté pan, heat olive oil over medium, then add garlic and cook until fragrant, about 1 minute.
