Cooking on a Budget Frugal Ginger Chicken

Are you a fan of the Paleo diet? Or, maybe you are just trying to add some healthy dinner options to your family’s diet. Here is a wonderful, delicious, and frugal Ginger Chicken Recipe from the blog, A Girl Worth Saving. I think it looks incredibly tasty, don’t you think?

The Ginger Chicken Recipe includes fresh ginger; flavorful chicken legs; pepper; red, green and yellow onions. All-in-all, this meal probably only costs about $5 in total to make! It doesn’t get much better (or cheaper) than that!  You can serve this dish complete with fresh steamed veggies and white or brown rice to complete the meal.

Cooking on a Budget Frugal Ginger ChickenIf you don’t know what the Paleo diet consists of, it’s basically a diet based on the types of foods that our early ancestors ate. These foods consisted of basic meats, vegetables, fish, and fruits. The diet excludes processed foods, dairy, and grains. Focusing your diet strictly on these food sources has helped many people lose weight and become healthier overall. Of course, the Ginger Chicken Recipe fits into the Paleo diet plan perfectly.

Ingredients

1.25lbs of chicken legs

1 small yellow onion, diced

1 piece of fresh ginger, roughly 1″ wide x 2″ tall x ½” thick, peeled and sliced

½ tsp black pepper (optional)

½ tsp Sea Salt

2 tbsp of diced red onion

1 stalk of green onion chopped.

1 tbsp of coconut oil

Instructions

Mix the coconut oil, chopped yellow onion and ginger together in your skillet. Make sure the burner is set to medium heat. Cook for 3 minutes.

Place your chicken legs in the skillet and add your seasonings. Cover with a lid.

Turn the heat of your burner down to low and allow the food to cook covered with a lid for 35 to 40 minutes.

The chicken legs will release a juice which creates a sauce which tastes very much like ginger. Throw in the red onion for the last 3 minutes.

Optional:

For more color on the chicken remove them from the skillet and broil for 3 to 5 minutes. Return this mixture to your sauce pan. Then, top it with chopped green onions. Enjoy!
