How are you spending your Memorial Day 2015? Memorial Day is meant to celebrate the men and women who have fought bravely for our freedoms. As the unofficial start of Summer, Memorial Day Weekend has also become a time that we get together with friends and family to enjoy said freedoms. So, why not enjoy this beautiful Summer weather. Gather your loved ones outdoors for a cookout and some time at the pool! Below, I have made three recipes (Portobello Sandwich, Homemade Popsicles, and a Sharp Shooter cocktail for the adults). These recipes are sure to add fun and deliciousness to your holiday menu without breaking your bank account. Have a great and safe Memorial Day weekend! And, don’t forget to stay frugal!
Red, White, and Blue Portobello Sandwich
(Serves 4)
A slightly different take on an American classic that veggie and meat lovers will both enjoy! Give the Red, White, and Blue Portobello Sandwich a try!
2 cloves minced garlic
6 tablespoons olive oil
1/2 teaspoon dried thyme
2 tablespoons balsamic vinegar
salt and pepper
4 Portobello mushroom caps, large
4 hamburger buns
1 tablespoon of capers
1/4 cup mayonnaise
1/4 cup blue cheese
1 large tomato sliced
Lettuce
1) In medium bowl mix garlic, olive oil, thyme, vinegar, salt and pepper (salt and pepper to taste).
2) Place the caps bottom side up on a piece of foil. Brush the caps with 1/2 the dressing. Fold the foil over the caps leaving only the top open. Place on the grill and cook for 5 minutes with the grill covered.
3) Turn the caps over and brush the remaining dressing on. Cook the same as before for another 4-5 minutes. At the same time toast the buns slightly.
4) In a small bowl mix mayonnaise and blue cheese. Spread over the buns and top with mushroom caps, tomato, and lettuce.
Patriotic Homemade Popsicles
(Serves 6)
These patriotic homemade popsicles make an awesome and healthy dessert recipe that your kids will enjoy eating and making!
3 cups vanilla yogurt
red food coloring
white food coloring
blue food coloring
wax paper
6 sugar ice cream cones
6 popsicle sticks
1) Tint 1/2 cup of yogurt with red food coloring and 1 1/2 cups with blue food coloring.
2) Fold six 12 inch square sheets into triangles, wrapping each around a sugar cone. Use tape to hold the shape. Place the paper cones inside the sugar cones.
3) Fill each cone with 1 tablespoon of red yogurt, followed by 2 tablespoons of plain white yogurt, and 3 tablespoons of blue yogurt. Insert popsicle stick and freeze each pop until firm (about 4 hours). Use a small box with six circles cut out to keep the pops upright.
Sharp Shooter
Here’s a dessert recipe that the ADULTS enjoy drinking and making! Just remember to be safe this holiday weekend!
1/3 oz vodka
1/3 oz blue Curacao
1/3 oz grenadine
1) Pour grenadine into a shot glass.
2) Slowly pour blue Curacao to create a blue layer.
3) Slowly add vodka to create clear top layer.
