Cooking on a Budget: Seared Chicken with Avocado and other Summer Recipes

Huzzah! Summer is just about here. That means it is time for cookouts, barbecues, campfires, and outdoor parties! Today we have two delicious, budget-friendly recipes that would be great to serve for dinner or at a summer party. Check out the Seared Chicken with fresh avocado and other frugal fabulous summer recipes.

Seared ChickenSeared Chicken Topped with Fresh Avocado

This recipe for seared chicken is healthy, delicious, and affordable.

Ingredients:

4 (4-ounce) boneless, skinless chicken breast halves

1 1/2 teaspoons of blackened seasoning

1 teaspoon of olive oil

1 avocado peeled and diced

1 jalapeno pepper seeded and chopped finely

2 tablespoons of freshly chopped cilantro

2 tablespoons of lime juice (approximately 1 whole lime)

1/4 teaspoon of salt

1 lime cut into fourths

Directions:

Season both sides of your chicken breasts with the blackened seasoning. Then, heat your olive oil in a nonstick skillet large enough to fit the chicken breasts. Once the oil has heated up, place the chicken in the pan until it is seared (approximately 1 minute). Turn the heat down to medium and cook on each side until the chicken is cooked to your liking (approximately 3 minutes per side). In another bowl, add your avocado, jalapeno pepper, cilantro, lime juice, and salt. Mix gently. When the chicken has finished cooking, squeeze the sliced up lime over the chicken. Then top the chicken with the avocado mixture. Enjoy!

Summer Pasta with Tomatoes and Corn

This is a refreshing summer recipe that won’t break the bank! It could be served as an appetizer, or you could add grilled chicken or shrimp and turn it into an entree! Delicious!

Ingredients:

1 lb. bow tie pasta

2 tablespoons of olive oil

Salt

1 pint of cherry tomatoes

3 ears of fresh corn (corn kernels should be cut off the cob)

2 garlic cloves (should be smashed or crushed)

2 tablespoons of unsalted butter

1/4 cup fresh basil leaves (torn into small pieces)

Directions:

Cook your bow tie pasta according to the directions on the box. Pasta should be cooked to al dente. When it has finished cooking, drain it. In a skillet, heat up your olive oil over medium heat and add the garlic and tomatoes. You should stir it periodically. Once the tomatoes have softened (this takes approximately 5 minutes), you should add the corn kernels and increase the heat. This should take approximately 5 minutes. Add salt to taste. Finally, add the vegetable mixture into the bow tie pasta and add your butter and fresh basil. Toss gently. Serve.

Frozen Chocolate Bananas

Easy, tasty, and affordable!

Ingredients:

Ripe bananas

Meltable chocolate wafers or chocolate magic shell

Optional- additional toppings that you like (such as chopped peanuts, M&Ms, shredded coconut, etc.)

Tools/Utensils:

Optional- wooden skewers (this makes it easier to coat the bananas)

Spoon

Bowl

Aluminum foil

Plate or tray

Directions:

Peel your bananas. If you are going to use skewers, insert them into the bananas now. Then, put your bananas in the freezer for approximately 30 minutes. After you take them out of the freezer, you can begin to melt your chocolate wafers according to the directions on the package (if you are using chocolate wafers). If you are using chocolate magic shell, pour it into a bowl and have a spoon ready. Use your melted chocolate wafers or chocolate magic shell to coat your bananas in chocolate. Depending upon the size of the bowl/container you’ve chosen, you can either dip the bananas in the chocolate or use the spoon to cover the bananas in chocolate. After you’ve covered the bananas in chocolate, lay them on the plate or tray covered in aluminum foil. If you would like to add toppings to your chocolate covered bananas, you need to do so before the chocolate hardens. Put the bananas back in the freezer for approximately 10 minutes. After that, you are ready to indulge!
