As summer rapidly begins to come to a close, we want to savor every last bit of warmth and sunshine. Soon enough kids will be heading back to school, all geared up for a new year of learning and growth. Until September rolls around (or the end of August for some of you), we will enjoy the remaining lazy, hazy days of summer. Today, we are bringing you a simple yet delicious summer recipe. Check out this awesome recipe for crock pot BBQ Hawaiian chicken tacos!
Ingredients for BBQ Hawaiian Chicken:
3 pounds of boneless skinless chicken breasts
1/2 cup of barbeque sauce (whatever kind you prefer, but a honey BBQ sauce works best with this recipe)
1 1/2 cups of unsweetened pineapple juice
1/2 cup of soy sauce
1/4 cup of packed brown sugar
1/4 cup of apple cider vinegar or rice vinegar
2 cloves of garlic that have been minced
1 to 2 tablespoons of sriracha depending on your taste
1 teaspoon of minced ginger
1 cup of shredded sharp cheddar cheese
12 flour tortillas
Ingredients for Pineapple Slaw:
Half of a small purple cabbage sliced into thin strips
Half of a small diced red onion
1/4 of a medium sized green cabbage sliced into thin strips
1/4 of a fresh diced pineapple
1/4 cup of unsweetened coconut milk
2 tablespoons of chopped cilantro
2 tablespoons of fresh lime juice
1 tablespoon of sriracha
1 teaspoon of brown sugar
1/4 teaspoon of salt
Crushed red pepper (per your taste) is optional
Directions for the BBQ Hawaiian Chicken Tacos:
Mix together the soy sauce, barbeque sauce, pineapple juice, vinegar, sriracha, ginger, garlic, and brown sugar in a bowl and stir it until it is combined. Put the chicken breasts in your crock pot, and pour the soy sauce mixture over the chicken breasts. Put the lid on your crock pot and cook for approximately 7 to 8 hours on low. In a bowl, combine all the ingredients for the pineapple slaw. Toss the ingredients together gently and then place the bowl in your refrigerators until the chicken is finished cooking. After the chicken has thoroughly cooked, tear it apart with forks or your (clean) hands. After the chicken is torn up, be sure to stir it into the remaining sauce in the crock pot and let it absorb to sauce. The chicken should sit for approximately a half an hour. After that, place the torn chicken on the tortillas, put the slaw on top of that, and add some shredded cheddar cheese to top it all off. Dig in!
