Can you believe it is already almost the middle of September? Fall will soon be here, and the weather will begin to grow a bit colder. We will soon be putting out our fall decorations and prepare for Halloween. Today, we bring you a nutritious recipe for Beef and Bean Chili that you can enjoy during the cooler fall months. This beef and bean chili recipe should help warm you up as the temperatures drop!
Beef and Bean Chili Ingredients:
3/4 pound of ground beef chuck
1 15-ounce can of kidney beans (be sure to rinse the beans)
1 28-ounce can of diced tomatoes
2 tablespoons of olive oil
2 tablespoons of tomato paste
2 crushed garlic cloves
2 teaspoons of chili powder
1 medium sized red onion (chopped into smaller pieces)
1 green bell pepper chopped
1 ounce of chopped semi-sweet chocolate
1 tablespoon of red wine vinegar
Salt and pepper to taste
1 sliced avocado
Beef and Bean Chili Directions:
In a large saucepan, heat the olive oil over medium to high heat. Once the oil has heated up, add the bell pepper, onion, and garlic. Cook for approximately 8 to 10 minutes until the vegetables become tender. Be sure to stir occasionally. Add the ground beef to the saucepan and break it into small pieces with a spoon. Cook it for approximately 4 to 6 minutes (or until it is no longer pink). Next, add in your tomato paste, cumin, and chili powder. Stir for approximately 1 minute. After that, add the diced tomatoes along with their juice, kidney beans, chopped chocolate, 1/2 cup of water, 1 teaspoon of salt, and 1/4 teaspoon of black pepper into the saucepan. Bring everything to a boil. After everything begins to boil, turn the heat down and simmer until the chili thickens. This should take approximately 20 to 25 minutes. Be sure to stir the chili periodically. Finally, add the vinegar and stir it to combine all the ingredients. Serve your chili and top it with slices of avocado and, if you like, pieces of onion.
