Cooking On A Budget: Luck Of The Irish Spinach Casserole

Just in time for St. Patrick’s Day, we have an easy and affordable recipe for Luck Of The Irish Spinach Casserole. You will surely get your daily greens with this casserole! It is a tasty favorite recipe that your whole family should enjoy. Give it a try, and we hope you enjoy it.

Luck Of The Irish Spinach Casserole Ingredients:

  • 2 lbs. of fresh spinach or 4 10 ounce packages of frozen spinach- your preference
  • 3 tablespoons of butter
  • 1/2 cup of chopped onion
  • 1 cup of bread crumbs
  • 2 tablespoons of flour
  • 1 cup of milk
  • 1 cup of grated cheddar cheese

Luck Of The Irish Spinach Casserole Directions:

Preheat your oven to 400 degrees Fahrenheit. If you are using fresh spinach, steam it in a pot over medium heat until it wilts. You can also steam fresh spinach in the microwave. Both methods take approximately 2 minutes. If you are using frozen spinach, thaw it out and squeeze the excess liquid out until it is dry. In a saute pan, heat the butter and onion until the onion is tender but not brown. Next, gradually add your flour and whisk. Once the flour has been added, pour in the milk and stir constantly until everything is combined. Add the cheddar cheese and stir until everything is combined and the cheese is melted. Spray a casserole dish with nonstick spray or another type of grease. Then, add in the steamed spinach and evenly spread it out in the pain. Pour the cheese mixture over the spinach and add the bread crumbs over the cheese sauce. Place the casserole dish in the 400 degree oven for approximately 20 to 30 minutes or until the bread crumbs are a light golden brown color. Dig in and enjoy!

If you are looking to add extra protein to this dish, you can add pre-cooked chicken or even quinoa prior to baking it in the oven.
