Cooking On A Budget: Almond Stuffed Chicken Breast Recipe

In many parts of the United States, the weather has grown cold. Warm, hearty meals are ideal for this time of year. Today, we have a almond stuffed chicken breast recipe. This recipe is delicious and healthy, and it adds some flavor to boring old chicken breasts. It pairs nicely with couscous and green beans. It is full of scrumptious nutty and cheesy flavor. Yum! Give it a try.

Almond Stuffed Chicken Breast Recipe Ingredients:

1/4 cup of slivered toasted almonds that have been chopped

1/3 cup of herb-and-garlic spreadable cheese (whatever brand you prefer!)

3 tablespoons of fresh parsley, chopped

4 6-ounce boneless, skinless chicken breasts halves

1/2 teaspoon of salt

1/4 teaspoon of fresh ground pepper

1 1/2 teaspoons of butter

Almond Stuffed Chicken Breast Recipe Directions:

In a small bowl, mix together the herb-and-garlic spreadable cheese with 3 tablespoons of the chopped almonds and 2 tablespoons of the chopped parsley. Then, cut small pockets into each chicken breast (this works best if you cut the pockets into the densest portion of each chicken breast). Next, stuff 1 1/2 tablespoons of the almond and cheese mixture into each chicken pocket. Once you have stuffed each chicken breast, close each pocket with a wooden tooth pick. Sprinkle salt and pepper to taste over the chicken. In a large nonstick skillet, heat your butter over medium-high heat. Add each chicken breast to the pan. Cook each chicken breast for 6 minutes per side (or until the chicken is thoroughly cooked through). Then, remove the chicken breasts from the pan, cover them, and let them sit for 2 minutes or so. Evenly spread the remaining almond and cheese mixture over top the cooked chicken breasts. Sprinkle the remaining tablespoon of parsley over the chicken breasts.

We recommend pairing this entree with green beans or broccoli, and perhaps some quinoa or cooked couscous. You could even sprinkle some toasted almonds over the top of your couscous for a little extra crunch and flavor.
