Ingredients
- 1 lb ground beef or ground turkery
- 1-2 tablespoons McCormick taco seasoning (as much or as little as you want)
- 1 medium sweet onion, diced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 15 oz. can black beans (wash and drain them)
- 1 15 oz. can kidney beans (“)
- 1 15 oz. can pinto or white beans (Optional: drain and rinse the canned beans)
- 1 15 oz. can corn
- 1 can Rotel tomatoes, pick your preferred choice of flavor
- 1 15 oz. can diced tomatoes
- 1/4 cup salsa (fresh is best)
- 1 15 oz. can tomato sauce
Directions
Make sure you brown your mean in a large pan set at medium heat. Add the onions in along with the bell peppers. Then, saute the mix for a couple minutes or until the veggies become soft. Throw in all of the remaining ingredients and stir to combine everything. Let the mixture simmer for about 20 minutes, stirring occasionally. If the soup begins to get too thick you can add a little water to thin it out. If you want to cook this in a Crock Pot, that’s super easy, too! Add all of the ingredients into your Crock Pot and cook it on low for several hours.
