Cooking On A Budget: Easy Breezy Spring Pasta

Spring is in full force, and before we know it summer will be here! In the meantime, let’s try to enjoy the beauty of spring. This time of year is great for light and tasty meals that are filling but not too heavy. Today, we have a delicious recipe for Easy Breezy Spring Pasta. This recipe is comprised of orecchiette, peas, pancetta, and cream. This recipe is very versatile and easy to lighten up or alter to suit your tastes and nutritional needs.

Breezy Spring Pasta Ingredients:

  • 1 (1-pound) package of orecchiette pasta
  • 1 tablespoon of Extra Virgin Olive Oil
  • 1 clove of garlic, finely minced
  • 1/2 pound of pancetta, cut it 1/4-inch thick, then cube it into small pieces
  • 4 tablespoons of butter
  • 1 small white onion, diced into fine pieces
  • 2 tablespoons of water or chicken stock
  • 1 cup of light cream (or ricotta cheese if you want to lighten up the recipe)
  • 2 cups of thawed out frozen peas
  • 1/4 cup of grated Parmesan-Reggiano Cheese
  • Salt and pepper to taste

Breezy Spring Pasta Directions:

Bring water to a boil in a large pot and add some salt. Make the orrecchiette according to the directions on your pasta box. In a large saucepan, heat up the garlic and the olive oil on a medium-high setting. Next, add the pancettta and cook until it begins to brown. Once the pancetta has turned brown, remove it and place it on a dish. In that same pan, melt your butter. Add the onions and cook them until they become soft. Next, add in the chicken stock or water and add salt and pepper to taste. Add the pancetta and cook it for approximately 2 more minutes. Turn the heat down to low and add the cream or ricotta cheese. Allow the mixture to simmer for 5 more minutes until everything has thickened slightly. Add the pasta to the mixture and stir it so everything gets coated with the sauce. Finally, add the peas and cheese. If you want more protein in this recipe, you can add in cooked or grilled chicken.
