Cooking On a Budget: Caesar Salad Pasta!

Look around and you will see the signs. Summer is rapidly coming to an end. It will soon be time for fall weather: pumpkins, the leaves changing color, Halloween, all those things we associate with the return of autumn. Today, we have a yummy, inexpensive, late summer/fall themed recipe that you can enjoy during the waning summer days. You can serve this frugal caesar salad pasta alongside your dinner, or enjoy a small bowl as a tasty snack. The ingredients are probably already in your pantry, so it’s super affordable. This caesar salad pasta only takes about 20-25 minutes to make. This will make approximately 6 servings.

Caesar Salad Pasta

Caesar Salad Pasta Ingredients:

 

Caesar Salad Pasta1 pounds of farfalle pasta

1 large lemon

1/4 cup of grated Parmesan cheese

3 tablespoons of light mayo

3 tablespoons of extra virgin olive oil

2 cloves of crushed garlic

1 pint of grape tomatoes cut in halves

1 medium sized zucchini grated

1 cup of thawed out frozen peas

1/4 cup of fresh basil leaves

Caesar Salad Pasta Directions:

Cook the farfalle pasta according to the directions on the box. While the pasta cooks, squeeze 1/4 cup of lemon juice into a large bowl. Grate 1 teaspoon of lemon peel into the bowl as well. Add in the mayo, Parmesan cheese, olive oil, garlic, and 1 teaspoon of salt and pepper. Add in the halved grape tomatoes, grated zucchini, peas, and basil. When the pasta has finished cooking, toss it gently with the lemon juice and olive oil mixture. This dish can be served warm or cold. You can garnish it with Parmesan cheese and basil leaves. If you want to save a little time, you can swap out the homemade dressing and replace it with 3/4 cup of bottled Caesar salad dressing. If you opt to skip the homemade dressing, omit the olive oil, lemon juice, and mayo. If you would like to turn this into an entree, you could add some sliced grilled chicken to the mix. VIOLA! Delicious caesar salad pasta for all!
