This Sunday is Valentine’s Day! If you are planning to make your own romantic meal, or just want to make some sweet treats for your family, you have come to the right place. Today, we are sharing a yummy recipe for Valentine cupcakes. More specifically, this recipe is for cherry cordial cupcakes. These are sweet, easy to make, and fun to customize! You can add your own decorations, wrappers, and festive flare.

Cherry Cordial Valentine Cupcakes Ingredients:

  • 1 1/3 cup of all purpose flour
  • 1 1/4 cups of granulated sugar
  • 1/3 cup of cocoa powder
  • 1/2 teaspoon of baking soda
  • 1/8 teaspoon of salt
  • 3/4 cup of water
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 6 tablespoons of butter, warm and melted
  • One 8-ounce package of cream cheese
  • One 21-ounce can of cherry pie filling
  • 2 tablespoons of coffee liqueur
  • 1/2 teaspoon of rum or rum extract
  • 1/2 cup or 3 ounces of semisweet chocolate chips

Cherry Cordial Valentine Cupcakes Directions:

Begin by preheating your oven to 350 degrees Fahrenheit. In a medium cupcake pan, insert your cupcake liners. You can choose whatever liners you like, but we prefer cute valentine’s wrappers with hearts! Next, combine the flour, 1 cup of sugar, cocoa powder, baking soda, and salt into a large bowl. Next, add the water, 1 of the eggs, vanilla, and melted butter. Mix together until everything is combined. Then, beat the mixture with an electric mixer on low speed for 30 seconds. In a different bowl, beat the cream cheese and the remaining egg and sugar until everything is smooth and mixed. Stir in 1/3 cup of the fruit filling, coffee liqueur, rum, and chocolate chips. Allow the mix to chill in your refrigerator for at least 15 minutes. Once the mixer has chilled, fill the cupcake liners one-third full. Top with 1 tablespoon of the cream cheese mixture and 1 tablespoon of the remaining fruit filling. Spoon extra batter over the fillings until the cupcake liners are two-thirds of the way full. Bake the cupcakes for approximately 20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Cool the cupcakes in the pan. Decorate with your favorite toppings and treats and enjoy!
