Today, we are bringing you a delicious, easy recipe for a tasty chicken taco salad complete with a homemade dressing! This yummy meal makes a great family dinner that everyone will love. It would also make a great party food. It is the perfect recipe to enjoy as you soak in the last weeks of summer.

1 1/4 pounds of boneless chicken breasts cut into small chunks

2 tablespoons of olive oil

a packet of taco seasoning

1 or 2 medium sizes tomatoes, diced

4 cups of chopped romaine lettuce

1/2 cup of black beans rinsed and drained

1 medium sized avocado peeled and diced

1/2 cup of fresh or frozen corn

1 cup of crushed tortillas

1 cup of shredded Monterey jack or cheddar cheese

1/2 cup of mayo

1/4 cup of sour cream OR greek yogurt (if you want to decrease calories)

3 or 4 tablespoons of freshly squeezed lime juice

1/4 cup of minced cilantro leaves

(optional) 1/2 teaspoon of sugar

Chicken Taco Salad Directions:

Put the chicken in a large skillet along with approximately a tablespoon of taco seasoning and the olive oil. Turn your burner on to medium-high heat and cook the chicken for around 5 minutes. cooking time will vary based on the size of the chicken pieces. After the chicken has finished cooking, remove it from heat and allow it to cool off. Being working on the salad. In a large bowl or on a platter, place your chopped lettuce. Top the lettuce with your chopped tomatoes, black beans, avocado, corn, cheese, chicken, and crushed tortilla chips. You can store the remaining dressing for several days in a refrigerator. Dig in and enjoy!
