Thanksgiving is over and Christmas is not far behind! Today is National Cookie Day, so we thought we would bring you a tasty holiday cookie recipe. If you enjoy baking during the holiday season, this is a great recipe for you. The following yummy recipe combines the classic snickdoodle cookie ingredients with an added twist- chocolate chips! Alas, you have the chipper doodle cookies!
Chipper Doodle Cookies
Chipper Doodle Cookies Ingredients:
3 cups of all-purpose flour
2 teaspoons of cream of tartar
1 teaspoon of baking soda
1/2 teaspoon of salt
1 cup (2 sticks) of softened butter or margarine
1 1/4 cups plus 3 tablespoons of sugar
1/2 teaspoon of vanilla extract
2 large eggs
1 cup of mini chocolate chips
2 teaspoons of ground cinnamon
Chipper Doodle Cookies Directions:
Being by preheating your oven to 375 degrees Fahrenheit. In a small bowl, mix together the flour, cream of tartar, baking soda, and salt. In a larger bowl, mix together the butter or margarine and 1 1/4 cups of sugar until it becomes creamy. You should also scrape the sides of the bowl with a spatula. Next, add the vanilla and then the eggs one at a time. On a low mixing speed, add the flour mixture. Beat it together until everything is blended. Add chocolate chips and stir with a spoon. In a small bowl, mix together the 3 remaining tablespoons of sugar with cinnamon. Use your hands to shape the dough into 1 1/2 inch balls by rounded measuring tablespoons. After you have rolled the dough into balls, roll the balls in the cinnamon-sugar mixture. On an ungreased cookie sheet, place the balls of dough approximately 2 inches apart. Use the bottom of your hand or the flat bottom of a glass to make 2 inch round cookies. Bake the cookies in the oven until they become a light golden color and are somewhat firm. This takes approximately 12 to 15 minutes. These cookies can be kept in a jar for up to 1 week. This recipes makes 42 cookies.
