Cooking On A Budget: Spinach & Chicken Pasta In One Pot!

All you have to do is look around and you will see that fall is rapidly approaching. It is getting dark outside earlier, summer plants and fruits are becoming less available, and kids and college students are back in school. Now is a great time to gather simple, delicious, and comforting meals that are perfect for autumn and winter. Try this delicious recipe for Spinach & Chicken Pasta in one pot! Like the name suggests, this recipe can be made entirely in one pot.

Ingredients:
  • 4 tablespoons of vegetable oil
  • 3 boneless/skinless chicken breasts (these should be sliced into bite sized pieces)
  • 16 ounces of  thinly sliced mushrooms
  • 4 garlic cloves
  • 2 cups of pasta (whatever kind you like!)
  • 4 cups of water
  • 1 teaspoon of salt
  • ¼ teaspoon of pepper
  • 2 tablespoons of  basil
  • 3 cups of chopped spinach
  • 1 cup of heavy cream
  • ½ cup of grated Parmesan cheese
  • ¼ cup of  fresh Parmesan cheese (used for garnish)

Directions:

Place a large sized sauce pan over medium heat. Then add the vegetable oil. Once the oil has become hot, add the chicken to the pan. Cook the chicken for approximately 6 minutes until it is nearly done cooking. Then, add the mushrooms and garlic. Cook them for another 4 minutes or until the mushrooms have softened. Next, add the pasta, water, salt, pepper, and basil to the pan. Bring the mixture to a boil and cook it until the pasta becomes al dente. This takes approximately 10 to 13 minutes. At this point, the water should be nearly gone. Finally, add the chopped spinach, heavy cream, and Parmesan. Bring everything to a simmer. Top it wish a garnish of fresh Parmesan.
