This past month, I had the opportunity to review a very unique product called Cook’s Delight Low Sodium Chicken Soup Base. Whether you are cooking soup, creating a sauce for pasta, or coming up with a whole new casserole dish to share with your family, this wonderful kitchen pantry must-have will give you the perfect flavor!
What’s really nice about this product is that each recipe you choose to master, can be accomplished easily and economically by using this soup base mixed with hot water. For one cup of stock or broth it only requires about 1 tsp of soup base. Some examples of dishes you could create, include (but are not limited to): stock, soup, sauce, as a rub and in gravies, casseroles and stuffing. Cook rice, pasta and potatoes in water with chicken stock for added seasoning, as well.
And for those of you that like to know how much sodium you are eating each day, this product contains less than 140 mg/sodium per serving and its even gluten free. The ingredients are not some scary foreign object that you haven’t heard of either…Roasted Chicken Meat, Dried Whey (Milk), Chicken Fat, Sugar, Sea Salt, Potato Starch, Natural Flavoring, Carrot Powder, Chicken Broth, and Turmeric.
Some other important factors about this product include:
- Main Ingredient is USDA Inspected Roasted Chicken Meat.
- Low Sodium (Less than 140mg sodium per serving).
- Concentrated chicken flavor without monosodium glutamate, hydrolyzed vegetable protein or autolyzed yeast extract.
- No artificial ingredients, artificial colors or chemical preservatives.
- 1/2 tsp makes 8 oz. of Roasted Chicken Broth/Stock. 1 pound of base makes 5 1/2 gallons.
- Manufactured in USDA inspected plant.
- Shelf Stable Product.
2 whole carrots, diced (You can also use carrot sticks as well)
2 stalks celery, diced
1 teaspoon salt
1/2 teaspoon freshly ground black pepper (more to taste)
1 teaspoon dried thyme
2 teaspoons parsley flakes
1 quart water, very, very hot (plus more as needed)
1 tablespoon Cook’s Delight Low Sodium Chicken Soup Base
3 tablespoons all-purpose flour
16 ounces frozen egg noodles (I really like using Reames)
- Place the chicken, vegetables, herbs and spices (including salt) in the “slow cooker” and turn to LOW. Mix Cook’s Delight Low Sodium Chicken Soup Base with 1 quart of HOT water. Pour the water/chicken soup base mix into crock pot. Add any extra water, if needed to cover entire chicken. Cover and let cook for 6 to 8 hours.
- After about 6 hours or so, take chicken breasts out to shred (using a fork) and set aside.
- In a small mixing bowl, place flour and 1/4 cup of the cooking liquid (from crock pot), stirring to form a thick paste. Add this paste to the slow cooker and mix well to combine. Then add your shredded chicken back the to the crock pot. Cover and allow to continue cooking.
- When you are about 20-30 minutes before serving, add your frozen noodles and turn crock pot on HIGH. Be sure stir and check on every so often, and make sure noodles are cooked through before sharing with your family!
