Cooking On A Budget: Cranberry And Orange Relish

Thanksgiving is not far away, and now is the time to start creating your menu, purchasing the ingredients, decorating your home, and planning for your feast! The actual day of Thanksgiving can get pretty hectic, and cooking space can be limited. The oven gets full and the refrigerator runs out of free spaces.

To prevent some of the day-of Thanksgiving chaos, why not cook some of your dishes in advance! You can bake certain desserts in advance. Some salads can be prepared a day or so before Thanksgiving. Today, we are bringing you a Thanksgiving dish that you can make ahead of time. Give this recipe for Cranberry and Orange relish a try! It is pretty easy to make, and it is a great addition to your Thanksgiving spread. Who knows, your family might like it more than the old fashioned canned cranberry sauce!

Cranberry And Orange Relish Ingredients:

2 tablespoons of unsalted butter
2 tablespoons of grated fresh ginger
1/2 cup of dark brown sugar
1 cup of orange juice
16 ounces of fresh or frozen cranberries
1/2 to 3/4 cup of orange marmalade
1/2 teaspoon of black pepper
2 tablespoons of minced fresh cilantro (optional)

Cranberry And Orange Relish Directions:

Place a pan on your stove and turn the burner on to medium heat. Then, melt the butter and add the fresh ginger. Cook the ginger and stir for approximately 2 minutes. Next, add the brown sugar, orange juice, and cranberries. Continue cooking until the cranberries burst open and thicken up the sauce. This takes approximately 15 minutes. After the sauce has thickened up, add the orange marmalade (the amount should be based on how sweet you want the sauce to be). Then, turn off the stove. Mix in the black pepper and the cilantro (if you choose to add it) just before you serve the sauce. You can serve this sauce warm or at room temperature.
