We are well into spring at this point and summer is not too far away. Now is the time to enjoy delicious meals out on your deck or patio (when the spring weather cooperates). One those warm and breezy spring days, what could be better than a delicious salad that your whole family will enjoy? This recipe for feta and blueberry spring salad could not be easier to assemble, nor more delectable to dine on! With just a few ingredients you can create a tasty meal that is both nutritious and bursting with fresh springtime flavor. Drizzle some homemade dressing over the top and your meal is all set!

Feta & Blueberry Spring Salad Ingredients:

Ingredients:
  • 6 cups of mixed greens
  • 1 cups of fresh blueberries
  • 4 ounces of crumbled feta cheese
  • ¼ cup of almonds (slivered or whole- your preference)
  • red onions cut into slivers (as much or as little as you like)

Lemon Poppy seed Salad Dressing Ingredients:

  • ⅓ cup of olive oil
  • ⅓ cup of balsamic vinegar (golden balsamic is best for this recipe)
  • 1 tablespoon of lemon juice
  • 1 tablespoon of honey
  • 1 teaspoon of poppy seeds
  • ¼ teaspoon of pepper

Feta & Blueberry Spring Salad Directions:

Put the salad greens in a large bowl. Then, add in the fresh blueberries, crumbled feta cheese, almonds, and red onions. Toss everything together until the ingredients are well mixed. In a bowl or salad dressing emulsifier, mix together the olive  oil, balsamic vinegar, lemon juice, honey, poppy seeds, and pepper. Use a fork to whisk the ingredients together if you are mixing them in a bowl. If you are using a salad dressing emulsifier, give the ingredients a few quick spins until everything is blended. Plate up your salad and drizzle some of the lemon poppy seed dressing over the top! If you want to add some protein to this salad, you can grill chick and top the salad with thin slices.
