Jiffy Mix put together a 68-page recipe cookbook filled with all of their best recipes that can be created using this versatile mix. The cookbook includes recipes for appetizers, main dishes, desserts, and much more. The JIFFY book is also available online as a download.

I love Jiffy mix because it is a very cheap and frugal mix at the grocery store. Its recipes are very versatile. One of my favorites from the book is Reuben Wedges. They can be cooked in the microwave. This is such an easy dish that is perfect for any weeknight dinner or even St. Patrick’s Day! Even my children love this dinner. They typically don’t like sauerkraut. Try this recipe soon, and let Frugal Fabulous Finds know how your family liked the dish (or any other from the Jiffy Recipe Book). (8 servings )
1 pkg. “JIFFY ” Pizza Crus t Mix
1/2 lb. deli corned beef
2/3 cup sauerkraut, drained
3/4 lb. Swiss cheese, shredded
1/3 cup Thousand Island dressing
1 Tbsp. Worcestershire Sauce
1. Mix Pizza Crus t according to package directions and let rest in warm place for 5 minutes covered.
2. Press dough with greased fingers onto greased 13″ glass cake plate. Brush edges of crust with Worcestershire Sauce and microwave on power level 10 (high) for 6 minutes. Turn crust every 2 minutes or use a turntable.
3. Spread crust with Thousand Island dressing and sprinkle corned beef, sauerkraut and cheese on top. Microwave on power level 10 (high) for 4 minutes. Turn plate every 2 minutes while microwaving or use a turntable.

If you want a crispy top on the wedges, place the dish in a hot oven for a few minutes when the dish is finished cooking in the microwave.
