May Day Recipes – Ginger Lime Shrimp
2 large Shallots peeled and chopped
1 fresh ginger peeled and chopped (2 inch piece)
4 cloves of garlic
3/4 cup soy sauce
1/2 cup fresh lime juice
2 tblspn sugar
1/4 cup chopped green onions
1/4 cup peanut oil
1/4 tspn ground black pepper (course)
2 lbs large shrimp w/ tails on
Blend shallots, ginger, garlic, soy, lime juice, and sugar until smooth. Add the green onion and oil. Blend until mixed completely. Season with pepper to taste. Pour marinade over the shrimp in a large bowl and let sit for 20 minutes. Grill shrimp for about 2 minutes on each side.
