Today, we have a recipe for a meatless, but still delicious, grilled Eggplant Parmesan. This recipe will not cost too much since it is meatless. However, it still packs a tasty punch! Try it out!

Grilled Eggplant Parmesan Ingredients:

  • 2 cups of roasted garlic tomato sauce
  • 2 tablespoons of chopped fresh parsley (if you do not have fresh parsley, you can use 1 1/2 teaspoons of parsley flakes)
  • 1/4 teaspoon of crushed chilies
  • 1/4 teaspoon of dried oregano
  • 1/4 teaspoon of pepper
  • 2 medium sized eggplants cut across into 8 slices per eggplant (you can leave the peel on)
  • 2 tablespoons of olive oil or canola oil
  • 2 cups of shredded part-skin mozzarella cheese

Eggplant Parmesan Directions:

Preheat your gas grill to medium-high heat. Then, combine the garlic tomato sauce, fresh parsley, crushed chilies, dried oregano, and pepper in a medium sized sauce pan that can safely be placed in your grill. Once those ingredients are combined in your saucepan, put the saucepan in your grill and close the lid. Cook the ingredients in the closed grill for approximately 10 minutes. Stir the mixture occasionally. While those ingredients cook, brush both sides of your eggplant slices with olive oil or canola oil. Place the eggplant slices on the grill, and cook them for approximately 3 minutes per side (or until the eggplant slices become soft). Grease with a 9 X 13″ baking pan with cooking spray. Then, place 8 slices of eggplant in the bottom of the pan. Next, spoon half of your garlic tomato sauce mixture over the eggplant slices and spread it out evenly. Take half of your shredded mozzarella cheese and sprinkle it over the sauce. Then repeat the process by placing 8 slices of eggplant over the previous layers of eggplant and sauce. Follow that with the sauce layer and a final layer of cheese. Once the parmigiana is assembled, put it on the grill for approximately 5 minutes until the sauce is bubbling and the cheese is melted.
