Can you believe it is September already? We can’t either! Whether you pack lunches for yourself or for your children, it can be difficult to continuously think of new, tasty meals that satisfy your hunger but are also frugally fabulous. Today, we provide you with some easy, inexpensive Homemade School Lunches of sandwiches to try out. Why not add some variety to those boring school or office lunches? Give the Ham and Pineapple Sandwich, the Chipotle Turkey Club Sandwich, and/or the Ham Banh Mi Sandwich a try! Let us know what you think of these recipes.
Homemade School Lunches – Ham and Pineapple Sandwich
Ingredients:
2 slices of pumpernickel bread
2 ounces of thinly sliced ham
2 slices of pineapple
3 ounces of fresh, sliced mozzarella
1/4 cup of fresh basil leaves
2 teaspoons of olive oil
Directions:
Take one slice of the pumpernickel bread and top it with ham, pineapple, mozzarella, and fresh basil. Then drizzle with the olive oil and top with the remaining slice of bread.
Homemade School Lunches – Chipotle Turkey Club Sandwich
Ingredients:
2 slices of multi-grain bread
2 ounces of thinly slices roasted turkey
2 slices of cooked bacon
1 ounce of sliced cheddar cheese
1/4 cup of sprouts
1 tablespoon of mayonnaise
1 pinch of chipotle chili powder
Directions:
Mix together the mayo and chipotle chili powder in a small bowl. Spread the mixture on your slices of bread and create a sandwich with the remaining ingredients.
Homemade School Lunches – Ham Banh Mi Sandwich
Ingredients:
2 ounces of thinly sliced ham
1 Portuguese sandwich roll cut in half
1/2 of a thinly sliced Kirby cucumber (thin strips)
1/4 carrot cut into thin strips
1/2 a jalapeno pepper sliced with the seeds removed
1/4 cup of fresh cilantro leaves
1 tablespoon of fresh lime juice
1 tablespoon of olive oil
Salt and pepper to taste
Directions:
Toss the cucumber, jalapeno, and carrot together in a small bowl with the lime juice, cilantro leaves, olive oil, and salt and pepper to taste. Create a sandwich with the remaining ingredients.
