Cooking on a Budget: Jack O Lantern Stuffed Peppers

Jack O Lantern Stuffed Peppers

Halloween is just over a week away! What better way to get the family excited for Halloween than by cooking festive meals. Today, we are bringing you a healthy, inexpensive Halloween meal. These Jack O Lantern stuffed peppers are relatively easy to make. We are convinced your whole family will love them! Although these peppers are stuffed with beef, you could opt to use other ingredients such as chicken, tofu, or quinoa. If you use chicken or quinoa in place of the beef, you should precook them before you stuff and bake the peppers.

Jack O Lantern Stuffed Peppers Ingredients:

  • 6 bell peppers (you can use whatever colors you want)
  • 1 pound of ground beef
  • 1 egg
  • 4 slices of whole wheat bread cut into cubes
  • 1 small onion chopped into fine pieces
  • 1 small tomato diced
  • 2 gloves of minced garlic
  • 1/2 cup of chili sauce
  • 1/4 cup of yellow mustard
  • 3 tablespoons of Worcestershire sauce
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of pepper

Jack O Lantern Stuffed Peppers Directions:

Begin by preheating your oven to 350 degree Fahrenheit. Then, grease a baking dish large enough to fit all 6 bell peppers. In a bowl, gently mix together the ground beef, egg, whole wheat bread cubes, chopped onion, diced tomatoes, garlic, chili sauce, mustard, Worcestershire sauce, salt, and pepper. Set aside. Clean your peppers by washing them, cutting off the top (as you would a pumpkin for carving). Remove the core and the seeds from the peppers. Carefully using a sharp pointed knife, “carve” eyes, a nose, and a mouth into each pepper. The peppers will look most like Jack-O-Lanterns if you carve triangular shaped eyes and a nose. When you have finished carving each pepper, carefully stuff them with the ground beef mixture. Sit them upright in the greased baking dish. Bake the stuffed peppers in the over until they have softened and the beef has thoroughly cooked through. This takes approximately one hour, but you should monitor the peppers in case they finish cooking sooner.
