If you have a little time, this meal is tasty and affordable. It does not require endless hours in the kitchen. This linguine pasta supper has all the colors of Christmas and is sure to be a hit with your whole family!

Linguine Pasta With Sun Dried Tomatoes Ingredients:

  • 1 package of linguine (16 ounces)
  • 1 jar of sun-dried tomatoes in oil (7 ounces)
  • 1/4 cup of pine nuts
  • 3 minced cloves of garlic
  • 1/4 cup of extra virgin olive oil
  • 1 package of crumbed feta cheese (4 ounces)
  • 2 tablespoons of fresh basil cut into thin strips

Linguine Pasta With Sun Dried Tomatoes Directions:

Cook the linguine according to the directions on the package. Drain the sun dried tomatoes but keep 2 tablespoons of the oil they were packaged in. Slice the tomatoes into thin slices. In a large skillet, toast the pine nuts over low to medium heat. Be sure to stir them frequently so they do not burn. This takes approximately 5 minutes. They will have a fragrant scent when they have toasted as they become more flavorful when they are toasted. After the pine nuts are toasted, remove them from the skillet. Turn the heat up to high and saute the garlic in 2 tablespoons of reserved oil and olive oil in the skillet. Do this for one minute or until the garlic becomes fragrant. Stir in the tomatoes and remove everything from heat. Toss the mixture together with the hot linguine, the feta cheese, and the basil in a large serving bowl. Sprinkle the toasted pine nuts over the top. Add a little salt and pepper to taste. If you would prefer to have extra protein, you could grill chicken breasts and mix them into the pasta. Enjoy!
