In addition to being easy to prepare, it is also extremely healthy. It is low in crabs and full of healthy summer veggies. A winning combo for sure! This is a nice summer dish that your whole family should enjoy. You can really play around with and tweak this recipe by adding other veggies and ingredients. Try it out and see what you think.
Mexican Beef & Zucchini Ingredients:
2 medium zucchinis, cut into slices and quartered
1 1/2 pounds of ground beef
2 garlic cloves that have been minced
1 (10 ounce can) of tomatoes with green chilis (you can also use salsa or diced tomatoes)
1 tablespoon of chili powder
1 teaspoon of ground cumin
1 teaspoon of salt
1/2 teaspoon of black pepper
1/2 teaspoon of onion powder
1/4 teaspoon of crushed red pepper flakes
Mexican Beef & Zucchini Directions:
Cook the ground beef over medium-high heat along with the minced garlic, salt, and black pepper. Once the ground beef has browned, add the tomatoes and the chili powder, cumin, onion powder, and crushed red pepper flakes. Then, place a lid on the pan and cook for approximately 10 more minutes on low heat. Next, add the zucchini and cook for another 10 minutes until the zucchini has softened slightly but is still firm. If you want to add a bit more complimentary flavor, consider adding some cilantro and/or sour cream. You could even throw in some chopped bell peppers or slices of onion (although if you add onion slices you may want to omit the onion powder). If you do not care about the carb count, you could serve this over plain rice or even quinoa. This dish is best served hot. Dig in and enjoy!
