Cooking On a Budget: Mexican Chicken And Peppers

Are you looking for a simple, healthy, but tasty and low cost meal for your family? If so, this recipe for Mexican chicken and peppers is just what you need! This recipe has lots of flavor and is full of healthy veggies and delicious flavors. It does not take very long to make and will leave you feeling full and content! If you like spicy flavors, you can always add additional spice to the recipe to increase the heat! Enjoy!

Recipe for Mexican Chicken and Peppers

Mexican Chicken and Peppers Ingredients:

2 teaspoons of Mexican seasoning (if you do not have Mexican seasoning in your pantry, just combine 1 teaspoon of chili powder, 1/2 teaspoon of ground cumin, 1/2 teaspoon of salt, and 1/8 of crushed red pepper)

2 boneless skinless chicken breasts

2 teaspoons of vegetable oil

1 sliced small red onion

1/2 a medium sized red bell pepper thinly sliced into strips

1/2 a medium sized yellow (or green) bell pepper thinly sliced into strips

1/4 cup of chipotle salsa or chunky salsa

1 tablespoon of lime juice

Mexican Chicken and Peppers Directions:

Begin by seasoning both sides of the chicken with the Mexican seasoning. Then, heat the vegetable oil in a large nonstick skillet over medium heat. Next, add in the onion and cook for approximately 3 minutes. Stir the onions occasionally to prevent them from burning. Then add in the bell pepper strips and cook them for approximately 3 minutes. Stir them from time to time. Push the veggies to the outer perimeter of the skillet and put the chicken in the middle. Cook the chicken for approximately 5 minutes and then flip it over. Next, add the salsa and lime to the veggies. Cook the veggies and chicken until the chicken is cooked through (no longer pink in the middle) and the veggies have softened. Place the cooked chicken on your plates and top the chicken with the veggie mixture. If you would like, you can place slices of lime or cilantro leaves on top of the chicken.
