MRS. CUBBISONS THANKSGIVING FUN FACTS, RECIPES + GIVEAWAY

With Thanksgiving only a few days away, I thought it would be fun to share a few fun facts about the holiday we will soon be celebrating with our loved ones. According to a new survey by researchers at Mrs. Cubbison’s Kitchen in Los Angeles, when asked “to whom or what will you be giving thanks for this year?,” the majority of Americans will be giving thanks for “family,” followed by “health,” “God,” and “friends.”  What are you going to be thankful for?

  • What’s on the menu? No matter who is at your table, turkey is still the top menu must-have, followed by stuffing at a close second. Mashed potatoes, pie and yams/sweet potatoes round out the top five favorite menu items.
  • When it comes to leftovers, pie and stuffing come in right behind a good turkey sandwich.  Although traditional fare is preferred, one in five families said they consider special diets when preparing their menu; people in the West prepare vegetarian and gluten-free choices while the South and Midwest offer items for those who are diabetic.  The Northeast and South are also trending towards lactose-free and kosher menu offerings.
  • Stuffing or Dressing? That depends on where you live. Southerners say “dressing” while people in the East, Midwest and West say “stuffing.” What do you call it?
  • What Do Families Do for Fun? After watching football, American families are connecting with games and stories.  Watching football was the number one activity mentioned by over 60% of people surveyed.  Approximately 40% said they share family stories on Thanksgiving Day.  Families in the West and Midwest like to play games together more than the rest of the country.  Funny family stories are about unusual dishes served at the meal; touching stories are about memories of family relatives and friends.

I have to admit, that I have never had the “pleasure” of being in charge of cooking the entire holiday meal, but I do have a handful of recipes that I love to contribute each year. In the survey mentioned above, “stuffing” was by far the most important traditional family recipe. Do you have a recipe that has been handed down from previous family generations? One recipe that I love to make for my family are Mini Chicken Parmesan Bites (see my recipe below), or Mini Meatloaves. Both call for Mrs. Cubbisons Classic Dressing (shown in the pic above), and both can be used for appetizers, dinner entrees, or a side dish for holiday together’s.

Mini Chicken Parmesan Bites

Ingredients

  • Frozen Boneless Chicken Breast (minimum of at least 3 breasts) or Ground Chicken
  • 1 egg
  • 1 pkg of Mrs. Cubbison’s Dressing
  • Salt & Pepper (just a pinch for flavor)
  • 1 cup Parmesan cheese
  • 1 cup Mozzarella Cheese (shredded)
  • 1 cup Spaghetti Sauce
  • Optional: Garlic Cloves (2, minced), Small Onion (½ chopped/grated), and to garnish, you can use Dried Parsley/Basil.
Kitchen Gadgets/Tools
  • 1 medium-sized bowl
  • 1-2 muffin pans (regular or mini) with Cooking Spray
  • Food processor or Blender (to ground your chicken)
  • 1 large pot + boiling water (to cook your chicken)
Directions
  1. Preheat your oven to 350 degrees and prepare your muffin pan with cooking spray, then set aside.
  2. If using Frozen Chicken Breast, you will need to boil a big pot of water. Once boiling, place chicken inside and let cook for about 15 minutes or so. You will need to check each breast, to make sure there is NO pink (meaning they are fully cooked). You can skip this step, if you use Ground Chicken Breast instead.
  3. Once finished cooking your chicken, place it in food processor and ground up. My daughter just loves helping me with this step! You will need to ground up ALL of your chicken, and place in a medium to large sized bowl. Here’s what it looks like:
  4. Combine chicken with egg, stuffing (or croutons/breadcrumbs with seasonings), a pinch of salt/pepper and Parmesan cheese. Lightly mix together, without over handling it. This is also the step, where you could add garlic and onions, for extra flavor.
  5. Put a couple spoonfuls of meat mixture into muffin pan. I filled mine up about ¾ full. Then put about, 1 teaspoon of spaghetti sauce on top. Bake for 15 minutes or so, and then top with shredded Mozzarella cheese. Place back in oven, until cheese is melted and serve with pasta, garlic bread or as an appetizer.
I bet you could even use leftover turkey, instead of chicken for this recipe too. Many families will be looking for leftover recipe ideas, and I would love to encourage you to try this one! To sum up this post, I would highly recommend Mrs. Cubbisons products for every family. They allow you so much room to try out new recipes, fall in love with new flavors, and bring your family together at the dinner table.
