Cooking on a Budget: Burgers and Patriotic Fruit Tarts for Military Appreciation Day

This Saturday is Military Appreciation Day (or Armed Forces Day). This is a day for our country to express how much they appreciate the men and women in uniform, both past and present. Many parks offer free admission. Stores and restaurants also give discounts. If you have someone in your family or circle of friends you may be wondering how you can show them your appreciation.

One way would be to have them over for cookout or meal. Just enjoying their company may be the best thanks you can give them. Think about what they like to eat and make them a home cooked meal. If there is one universal need and enjoyment it’s food! To feel extra patriotic here are a couple of recipes that I’ve included to really hit the theme of the weekend – Thank you for your service!

Red White and Blue Cheese Burgers

These delicious Blue Cheese Burgers make for a great patriotic twist on an American Classic! Now that the weather is getting hot it’s nice to break out the grill!

1 lb lean ground sirloin

salt

fresh ground black pepper

1 red bell pepper (stemmed, seeded, and quartered)

1 teaspoon of olive oil

4 hamburger buns

1 large sweet white onion

2 tablespoons crumbled blue cheese

1) Preheat grill to med-high heat.

2) Shape the sirloin into four 1/2 inch thick patties. Season with salt and pepper.

3) Lightly drizzle the red pepper with olive oil

4) Cook the burgers on both sides until they are at desired doneness. At the same time grill the peppers for 2-3 minutes per side.

5) Lightly toast buns.

6) Serve the burgers on the toasted buns with grilled peppers, slices of onion, and crumbled blue cheese.

Patriotic Fruit Tarts

Who doesn’t love dessert? Healthy desserts such as these Patriotic Fruit Tarts are perfect for this weekend! Arrange the berries however you see fit. I don’t think anyone will be too critical as long as they get a piece!

1 package of refrigerated sugar cookie dough (18 oz)

1 package cream cheese (8 oz)

1/4 cup sugar

1/2 teaspoon almond extract

1 cup fresh blueberries

1 cup fresh raspberry

1 cup halved fresh strawberries

1) Preheat oven to 350 degrees

2) Press cookie dough into 12 inch pizza pan or cookie sheet.

3) Bake for 10-15 minutes or until golden brown and then cool on wire rack.

4) In a small bowl beat cream cheese, almond extract, and sugar until smooth and then spread over the crust.

5) Arrange the cut strawberries in the shapes of a star. Add a border with the blueberries and raspberries.
