Roasted Chicken With Potatoes Ingredients:
- 1 teaspoon salt
- 3/4 teaspoon of ground black pepper, divided
- 1/2 teaspoon of dried sage
- 2.5 pounds of boneless skinless chicken breasts
- 12 ounces of red potatoes (cut them into wedges)
- 1 1/2 cups of peeled, cubed butternut squash (approximately 8 ounces)
- 2 tablespoons of melted butter
- Cooking spray
Roasted Chicken With Potatoes Directions:
Start by preheating your oven to 400 degrees Fahrenheit. In a small bowl, mix together 1 1/2 tablespoons of garlic, 1/2 teaspoon of salt, 1/2 teaspoon of pepper, and sage. Rub the garlic mixture over the chicken breasts. Spray non stick cooking spray on a broiler pan rack and place the chicken breasts on top of it. Then, mix together the butternut squash cubes, potato wedges, melted butter, 1 1/2 teaspoons garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Put the potato/butternut squash mixture around the chicken breasts. Cook at 400 degrees until the chicken breasts are fully cooked through (depending on the size of the breasts, this could take 20-30+ minutes). To ensure that the chicken breasts are fully cooked through, use a meat thermometer. The chicken breast’s internal temperature will reach 165 degrees Fahrenheit when they are fully cooked through.
