Cooking On A Budget: Delicious Summer Pineapple Pie

There is nothing better in the summertime than a delicious and refreshing treat! Especially if you are enjoying your treat by a pool or overlooking an ocean. Today, we are bringing you an absolutely delicious and refreshing recipe for summer pineapple pie! This tasty pie could not get any more delectable!

Delicious Summer Pineapple Pie Ingredients:

For the crust:
  • 2 ½ cups of graham cracker crumbs (plain graham crackers work best)
  • ½ cup of melted unsalted butter
For the filling:
  • 20 ounces of well-drained crushed pineapple
  • 2 (3.4 ounce) packages of vanilla instant pudding mix
  • 8 ounces of sour cream
  • 8 ounces of cool whip
For the pie’s garnish:
  • Pineapple slices
  • Maraschino cherries

Delicious Summer Pineapple Pie Directions:

Begin by grinding the graham crackers up into a fine powder in your blender or food processor. Then, mix the powdered graham crackers with the unsalted melted butter. In a pie pan, spread the crust mixture out in the pan and begin to push it down and out into an even layer. Be sure to push it up the sides of the pan as well. Once you have created your crust, put it in the refrigerator while you prepare the pie filling. In a bowl, mix together the crushed pineapple, the vanilla instant pudding mixes, and sour cream. Once everything is thoroughly mixed, pour it into the pie pan and spread it out. On top of the pie, add a layer of cool whip. Decorate the cool whip layer with the pineapple slices and cherries. Put it back in the refrigerater to cool a bit and set up for approximately 20-30 minutes. Then, slice it up and dig in!

*If you’d like, you can use another fruit in place of the pineapple. Strawberries, peaches, or blueberries work best, but you can use whatever fruit you want!
