Cooking On A Budget: Veggies With Spinach Fettuccine

Today we are bringing you a delicious, simple, and affordable recipe for Veggies with Spinach Fettuccine! This recipe is great because it combines veggies and pasta and a whole lot of yummy flavor. If you want to add some additional protein to this recipe, you could grill a boneless skinless chicken breast and toss it in with the pasta. This would undoubtedly add some extra flavor to an already delicious recipe! You could also add in extra veggies if you have some that need to be used up at home. Sliced orange or yellow pepper would add nice flavor to the recipe as well as slices of a green pepper.

Veggies with Spinach Fettuccine Ingredients:

  • 6 solid-packed sun-dried tomatoes
  • 3 ounces of uncooked spinach fettuccine

  • 1 tablespoon of olive oil
  • 1/4 cup of chopped onion
  • 1/4 cup of sliced red bell pepper
  • 1 clove of minced garlic
  • 1/2 cup of sliced mushrooms
  • 1/2 cup of roughly chopped fresh spinach
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of ground nutmeg
  • 1/8 teaspoon of black pepper

Veggies with Spinach Fettuccine Directions:

Put the sun-dried tomatoes in a bowl, and pour boiling water over the tomatoes. There should be just enough water over the tomatoes to cover them. Let the tomatoes sit in the boiling water for 10 to 15 minutes or until the tomatoes are soft. After the tomatoes have softened, dump out the water and cut the tomatoes into thin strips. Next, cook your pasta according to the directions on the package. When the pasta has finished cooking, drain all the water. In a large, nonstick skillet, add olive oil and heat it over medium-high heat. Add in the onion, bell pepper, and garlic until everything has become tender. Next, add in your mushrooms and spinach. Cook everything for approximately 1 minute and continue to stir. Add in your sun-dried tomatoes, pasta, salt, nutmeg, and black pepper. Continue to cook and stir for approximately 2 minutes or until everything has heated up. Dig in and enjoy!
